How did you get started in the family business?
When I was 10 years old,my dad would take me to work with him on a Sunday morning , stand me on a milk crate and give me odd jobs here and there to do.

Favourite career memory?
In 2008 creating and launching a brand new restaurant name, Steersons Steakhouse!

Favourite food?
I don’t have a favourite food, I enjoy all foods! but I am more connected with Mediterranean Cuisine, fresh seafood in particular. Actually I do have a favourite dessert, Galaktabouriko.

Dream restaurant to visit?
STK in NY – sexiest New York style steakhouse in the world.

If I wasn’t in hospitality I would be…
Furniture designer or architect.

Gunners Barracks in Mosman was my last place of work but before that I worked in a number of restaurants in Santorini in Greece, such a beautiful place.

Favourite career memory?
2004 Olympic Games in Athens, I was working in the Thission Hotel at the time, great atmosphere, great customers and great $$$!

Favourite food?
Mediterranean food, fresh and simple!

Dream restaurant to visit?
El Bulli, Madrid, Spain.

Favourite career highlight?
When I got promoted from Assistant Sommelier to Master Sommelier at Restaurant Kasteel, not bad for a 21 year old! Also getting sixth place at Best Sommelier of Belgium, just missed out on the finals!

Favourite Drink?
Posh drink: Chateau Phelan-Segur, St-Estephe, Bordeaux or a nice bottle of Greek red like Sigalas Mavrotragano, soft and smooth! Single Malt or Aged Rum matched with a nice cigar…Heaven!

Dream restaurant to visit?
I wouldn’t mind trying Noma in Copenhagen, it’s been chosen as one of the Best Restaurants in the world! Would like to see what all the fuss is about.

If I wasn’t in hospitality I would be…
In the Military or a Historian.
